Hausgemachter grüner Burger auf Ciabatta

Dieser hausgemachte grüne Burger wird aus Kartoffeln, Saubohnen und Spinat zubereitet und auf kräftigem Brot mit knackigem Salat und Polder-Ketchup serviert. Ein köstliches vegetarisches Essen, das schnell auf dem Tisch steht.

Zutaten

  • 150 g potato
  • 150 g fava beans, double-shelled
  • 1 shallot
  • 1 garlic clove
  • 1/2 tsp ground cumin
  • 100 g fresh spinach
  • 1/2 beaten egg
  • 20 g breadcrumbs
  • 4 slices pain de campagne or other sturdy bread
  • lollo rosso or other lettuce of your choice
  • polderketchup
  • 1 bunch coriander

Zubereitung

    Peel the potato and cut into small cubes. Cook together with the fava beans in salted water for about 5 min until tender. Drain and set aside.Heat oil in a frying pan, finely chop the shallot and garlic and sauté them briefly with the cumin powder, then add the spinach and let it wilt briefly.Take a cutting board, place the potato, fava beans and the spinach mixture on it. Chop the mixture finely with a cleaver.Make a well in the center, add the egg and the breadcrumbs and knead into a sticky mixture. Taste and add more salt if needed.Form 4 burgers and fry them until browned in a frying pan over medium heat.Toast the bread, top with lettuce, the burgers, ketchup and coriander.
