Once soaked, drain the wood chips and add them to the smoker’s wood chip box or directly onto the coals if using a charcoal smoker. You want thin, blue smoke, not thick white smoke, which can make the meat bitter. When the smoker reaches 225°F and you see that clean blue smoke, you’re ready to start cooking.

Smoke undisturbed for 6-8 hours—resist the urge to peek, as opening the lid releases heat and smoke. At the 4-hour mark, mix the 0.5 cup Brown Sugar and 0.25 cup Apple Cider Vinegar in a small bowl. Brush this mixture over the pork to create a sticky, tangy bark. Continue smoking until the internal temperature reaches 195-203°F—this is where it becomes fork-tender.

    Rest and Shred the Pork: Once the pork reaches temperature, remove it from the smoker and wrap it tightly in foil. Let it rest for at least 1 hour—this step is non-negotiable. Resting allows the juices to redistribute, ensuring every bite is moist and flavorful. After resting, shred the pork using two forks. It should pull apart effortlessly, with a beautiful smoke ring just beneath the bark. The bark will be dark and caramelized from the brown sugar and vinegar glaze, while the inside stays juicy and tender. Serve immediately on buns or as a main dish with your favorite sides.
