Griechischer Reis

Dieser aromatische, wohltuende und wunderbar einfache griechische Reis macht aus alltäglichen Zutaten eine besondere Beilage. Langkörniger weißer Reis köchelt sanft in einer herzhaften Brühe mit Olivenöl, Schalotten, Knoblauch, frischer Zitronenschale und Zitronensaft sowie frischen Kräutern.
Zutaten
- 2 tablespoons olive oil
- 2 shallots (finely diced)
- 1 1/2 cups white long grain rice ((rinsed & strained well))
- 6 cloves garlic (minced or pressed)
- 2 cups chicken broth
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 lemon (zested & juiced)
- 2 tablespoons chopped fresh parsley ((flat-leaf parsley))
- 2 tablespoons chopped fresh dill
Zubereitung

In a saucepan, over medium heat, heat the olive oil. Add the shallots and cook until they soften.

Stir in the rice and garlic, and cook for another 1 minute, while stirring constantly.

Add in the chicken broth, salt, and pepper. Bring to a boil. Once boiling, cover the pan, and reduce the heat to low. Let simmer for 18-20 minutes or until the rice is soft and tender.

Fluff the rice with a fork and stir in the lemon zest, lemon juice, parsley, and dill. Serve and enjoy!
