Couscous mit Knoblauch und knusprigem Knoblauch

Dieses Knoblauch-Couscous ist ein Rezept, zu dem ich greife, wenn ich eine schmackhafte und einfach zuzubereitende Beilage möchte. Es ist stark von meinem Knoblauchbutterreis inspiriert, einem weiteren Lieblingsrezept meiner Familie. Der Knoblauch kommt gleich doppelt zum Einsatz – als knusprige Chips und fein gehackt und angebraten – und macht dieses Rezept zu etwas ganz Besonderem.
Zutaten
- 10 cloves garlic
- 3 tablespoons olive oil
- 1 3/4 cups chicken stock
- 1/2 teaspoon salt
- 1 1/2 cups couscous (see notes)
- 1/4 cup minced parsley
- 1 tablespoon lemon juice (fresh is best)

prep garlic: Instructions Cut half of the garlic cloves into thin slices. Mince the other half of the garlic.

cook garlic chips: Heat the olive oil in a medium pot over medium heat. Add the sliced garlic and let it cook for 3-4 minutes, until it's golden. Using a slotted spoon, remove the crispy garlic chips from the pot. NOTE: if some darken quicker, remove the darker ones first.

cook couscous: Add the minced garlic to the pot and let it cook for 1 minute. Add the stock and salt and bring the pot to a boil. Stir in the couscous, cover the pot, and let it simmer for 5 minutes, reducing the heat if needed.

let rest: Remove the pot from the heat and set it aside, covered, for 5 minutes. Fluff the couscous with a fork and then stir in the parsley and lemon juice.
