Spargel aus dem Wok

Die Spargelstangen werden in Scheiben geschnitten und in aromatischem, mit Ingwer und Knoblauch verfeinertem Öl gebraten und anschließend mit Zitronensaft abgerundet. Diese von der chinesischen Küche inspirierte Beilage ist schnell zubereitet und bringt Farbe auf den Esstisch. {Vegan, glutenfrei}
Zutaten
- 1 tablespoon olive oil
- 1/2 ” ginger (, julienned)
- 2 cloves garlic (, sliced)
- 1 lb asparagus (, tough ends removed, slice on a bias into 1/2” thick pieces)
- 1/2 teaspoon salt ((or to taste))
- Freshly ground black pepper
- 1 to 2 lemon wedges
Zubereitung

Heat the oil in a large skillet over medium-high heat until hot.

Add the ginger and garlic. Stir and cook to release fragrance, 30 seconds.

Add the asparagus. Cook and stir until starting to turn tender, 2 to 3 minutes.

Sprinkle with salt and add ground black pepper, stir to mix well. Turn to medium-low heat and taste the asparagus. Adjust seasoning if needed. Turn off the heat. Squeeze in the lemon juice and stir again to mix well. Transfer everything to a plate. Serve hot as a side dish.
