Zutaten

  • 2-3 tablespoons Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Jeera Seeds
  • 1/2 teaspoon Urad Dal
  • 1/2 teaspoon Chana Dal
  • 2 whole Red Chillies
  • 8-10 Curry Leaves
  • 1 teaspoon chopped Garlic
  • 1 large Onion (sliced)
  • 500 grams Pumpkin with skin (diced into 1-inch pieces)
  • 1 1/4 teaspoons Salt
  • 1/2 teaspoon Turmeric
  • 2-3 teaspoons Sambar Powder
  • 1/2 cup crushed Peanuts
  • 2 tablespoons chopped Coriander Leaves

Zubereitung

    Prepare tempering: Heat oil in a pan. Add mustard seeds, jeera seeds, urad dal, and chana dal. Once the mustard and jeera start spluttering, add whole red chillies, curry leaves, garlic, and onions. Sauté until the onions turn pink.

    Cook pumpkin: Add pumpkin, salt, turmeric, and mix. Add 1/4 cup of water, cover, and cook for 8-9 minutes until the pumpkin becomes tender.

    Season and adjust consistency: Add sambar powder and mix well. If it feels too dry, add another splash of water, cover, and cook for an additional 3 minutes.

    Garnish and serve: Finally, add crushed peanuts and chopped coriander. Toss well for a minute or two. Serve the Peanut Pumpkin Sabji hot. Enjoy!
