Koriander-Limetten-Reis

Zutaten

  • 1 cup long grain white rice
  • 2 teaspoons olive oil (or butter)
  • 2 cloves garlic (minced)
  • 1 1/2 cups water
  • zest of one lime
  • 2 tablespoons fresh lime juice (from 1 lime)
  • 2/3 cup chopped fresh cilantro (tough stems removed)
  • 1/4 teaspoon salt (or to taste)

Zubereitung

    Place the rice in a fine mesh strainer and rinse well; drain. Set aside.

    Add the olive oil (or butter) to a medium saucepan. Heat over medium heat. Once the pan is hot, add the rice and garlic and toast for 3-4 minutes, stirring constantly.

    Stir in the water and bring to a simmer.

    As soon as the pot comes to a boil, immediately cover the pot with a lid and reduce the heat to the lowest setting. Cook for 15 minutes, without lifting the lid on the pot. The pot should be at a very low simmer while the rice cooks.

    Then remove the pot from the heat and let it rest with the lid on for 10 minutes.

    Remove the lid and fluff the rice. Stir in the lime zest, lime juice, cilantro and salt, to taste. Serve.
