Zutaten

  • 2-3 lbs russet potatoes (scrubbed and cubed into 3/4-inch pieces)
  • 1 large sweet or yellow onion (diced)
  • 4 Tbsp vegetable oil ((OR bacon grease) )
  • 2 Tbsp salted or unsalted butter
  • 2 tsp seasoned salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic or garlic powder
  • green onions for garnishing (optional)

Zubereitung

  1. 1

Cut potatoes into 3/4-inch pieces. (Peel or peel intact)

  2. 2

Heat 2 Tbsp oil in a 12 inch cast iron skillet or a large, deep stainless steel skillet over medium-high. Add onions. Cook for 2 minutes just until softened and translucent then use a slotted spoon to remove them from the pan. Set aside.

  3. 3

Add the remaining oil and the butter to the skillet. Add the cubed potatoes, turning to coat. Cover and cook over medium-low for 15 minutes. Check and gently stir every 5 minutes.

  4. 4

Uncover and add the seasoned salt, black pepper, granulated garlic and onions tossing together until combined.

  5. 5

Cook 10 minutes longer uncovered, flipping potatoes every 5 minutes. Cook until the potatoes are tender on the inside and golden brown on the outside. (If cooking in batches, add a drizzle of oil to the pan between each batch.)

  6. 6

Serve immediately garnished with green onions or parsley.
