Pulled Chicken with Cilantro Lime

Cooking chicken breasts in a slow cooker tenderizes the chicken breast making it easy to pull apart and shredded. This chicken is infused with a spicy lime flavor and is delicious on lettuce leaves or in a tortilla with a side of guacamole and salsa.

  • red onion 1.00 small finely chopped
  • lime juice 0.25 cup fresh-squeezed
  • plus 2 tbsp
  • Kosher Salt 0.25 tsp
  • boneless
  • skinless chicken breasts 1.00 lbs all fat discarded
  • chili powder 1.00 tsp
  • ground cumin 0.50 tsp
  • low sodium chicken broth 1.00 cup fat-free
  • lime 1.00 small cut into wedges for serving
  • 0.25 cup chopped

Zubereitung

    In a medium bowl

    stir together the onion

    and salt. Cover with plastic wrap and set aside at room temperature for 3 to 5 hours

    while the chicken cooks.

    Place the chicken in a medium slow cooker. Sprinkle with the chili powder and cumin. Pour the chicken broth around the chicken. Cover and cook on low for 3 to 5 hours or until chicken reaches a temperature of 165°F.

    Remove the chicken from the slow cooker and using the tines of two forks

    shred the chicken. Place the chicken in a bowl and toss with the onion lime mixture. Serve with lime wedges and chopped cilantro sprinkled on top.

    Electric pressure cooker variation: Prepare the onion lime mixture as above. Place the chicken in the pressure cooker. Sprinkle with chili powder and cumin. Pour the chicken broth around the chicken. Secure the lid. Cook on high pressure for 6 minutes. Allow the pressure to release naturally for 5 minutes
