Zutaten
- 8 ounces dried pasta
- 1 pound chicken (cut into bite sized pieces)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning (divided)
- Salt and pepper (to taste)
- 2 Tablespoons oil (divided)
- 2 Tablespoons butter
- 3 cloves garlic (minced)
- 3 Tablespoons all-purpose flour
- 1 Tablespoon tomato paste
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1/3 cup sun-dried tomatoes
- 1/2 teaspoon red pepper flakes
- 1/3 cup grated Parmesan cheese
- 1/4 cup fresh basil (optional)
Zubereitung
- 1
Bring a large pot of water to boil and cook pasta according to the package instructions. Drain and set aside. Reserve 1 cup of pasta water for the sauce.
- 2
Season chicken pieces with garlic powder, onion powder, ½ teaspoon of Italian seasoning, salt and pepper.
- 3
Heat a large skillet over medium high heat. Add 1 Tablespoon of oil, swirling to coat the pan. Once hot, add the chicken and cook for 5-6 minutes until browned. Remove from the pan and cover with foil to keep warm.
- 4
Return the pan to medium heat, add the rest of the oil and butter. Let the butter melt, stir in the garlic and saute for 1-2 minutes until you can start to smell it. Sprinkle the flour over the garlic and stir until no white streaks remain.
- 5
Stir in the tomato paste until combined with the flour. Whisk in the chicken broth and heavy cream until smooth. Add the sun-dried tomatoes, remaining Italian seasoning and red pepper flakes. Simmer for 1-2 minutes to thicken.
- 6
Add the cooked pasta, chicken, and Parmesan cheese to the sauce and toss to coat. Add some of the reserved pasta water if the sauce is too thick. Stir in basil if using and season with salt and pepper to taste.
