Kotopoulo kokinisto: Hähnchen und Kartoffeln aus einer Form in Tomatensauce

Kokinisto ist eine beliebte griechische Garmethode. Kokino bedeutet „rot“, daher ist Kokinisto eine rote Sauce aus Tomaten, Zwiebeln, Knoblauch und Kräutern. Dieses Gericht mag ich besonders, weil man buchstäblich alle Zutaten in eine Auflaufform gibt, vermischt und backt, bis alles weich ist. Die ganze Arbeit erledigt der Ofen, weshalb es sich perfekt für einen hektischen Wochentag eignet. Ich habe Harissa hinzugefügt, eine Paste aus gerösteten roten Paprika, Knoblauch und Gewürzen. Wenn Sie keine finden, können Sie stattdessen geröstete rote Paprika aus dem Glas verwenden. Pürieren Sie sie mit den Tomaten, und Sie werden die leicht süßliche, rauchige Note lieben, die sie dem Gericht verleihen.
