Avocado-Stampf, gegrillter Brokkoli und weich gekochtes Ei

Zutaten

  • 1 avocado
  • 2 eggs
  • 2 slices sourdough
  • 2 tsp pistachio dukkah
  • 2 slices bacon (fried)
  • 1 wedge lemon
  • 1 pinch salt
  • 1 pich pepper
  • 1 bunch stemmed broccoli
  • 1 pinch maldon salt (optional)

Zubereitung

    --- Soft Boiled Eggs ---

    Boil water in a medium saucepan. Add eggs gently into pan and set timer for 6.5 minutes. When cooked remove from water and place in ice cold water straight away *see tips*

    --- Avo on Toast ---

  4. 4

    Cut avocado in half and remove from skin. Place in bowl with a little lemon juice, salt & pepper. Roughly smash using a fork. You still want a few chunks so don't go too crazy

    Rub stemmed broccoli in olive oil, salt and pepper and grill on bbq or grill pan for 3 - 4 mins.

    Drizzle cut sourdough in oil and grill on bbq or grill pan until toasted.

    --- Serving ---

    Place smashed avo on top of grilled sourdough. Add eggs, broccoli & bacon on top of avo and spoon the dukkah over the top. Finish with some maldon salt and a squeeze of lemon and ENJOY!
