Set the pan aside.Spread half of the tortilla chips in an even layer over the bottom of the baking dish.Spoon half of the minced beef mixture over the chips. Then scatter half of the black beans and half of the grated cheese on top.Repeat with the remaining chips, beef, beans and cheese so you get nice layers.Slide the dish into the oven without a lid and bake for 10 to 12 minutes, until the cheese is golden and melted and the edges of the chips are nicely crisp.Remove the dish from the oven. Scatter the jalapeños, cherry tomatoes and spring onions over the top.Serve straight away with guacamole, sour cream and salsa in small bowls on the side. That way everyone can help themselves and start sharing and tasting.
