Burger vert maison sur pain ciabatta

Ce burger vert maison est préparé avec de la pomme de terre, des fèves et des épinards, puis servi sur un pain consistant avec de la laitue croquante et du ketchup polder. Un délicieux repas végétarien prêt en un rien de temps.

Ingrédients

  • 150 g potato
  • 150 g fava beans, double-shelled
  • 1 shallot
  • 1 garlic clove
  • 1/2 tsp ground cumin
  • 100 g fresh spinach
  • 1/2 beaten egg
  • 20 g breadcrumbs
  • 4 slices pain de campagne or other sturdy bread
  • lollo rosso or other lettuce of your choice
  • polderketchup
  • 1 bunch coriander

    Peel the potato and cut into small cubes. Cook together with the fava beans in salted water for about 5 min until tender. Drain and set aside.Heat oil in a frying pan, finely chop the shallot and garlic and sauté them briefly with the cumin powder, then add the spinach and let it wilt briefly.Take a cutting board, place the potato, fava beans and the spinach mixture on it. Chop the mixture finely with a cleaver.Make a well in the center, add the egg and the breadcrumbs and knead into a sticky mixture. Taste and add more salt if needed.Form 4 burgers and fry them until browned in a frying pan over medium heat.Toast the bread, top with lettuce, the burgers, ketchup and coriander.
