Ingrédients

  • Shrimp: 1 pound large shrimp, peeled and deveined (thawed if frozen)
  • Vegetables: 2 cups broccoli florets, 1 red bell pepper (sliced), 1 cup snap peas, 1 medium carrot (thinly sliced), 3 green onions
  • Aromatics: 3 garlic cloves (minced), 1 tablespoon fresh ginger (grated)
  • Sauce: 1/4 cup low-sodium soy sauce or tamari, 1 tablespoon oyster sauce (optional), 1 tablespoon honey or maple syrup, 2 teaspoons rice vinegar, 1 teaspoon sesame oil, 1/3 cup chicken or vegetable broth
  • Thickener: 2 teaspoons cornstarch (mixed with 2 teaspoons water)
  • Oil: 1–2 tablespoons avocado or canola oil
  • Garnish: Sesame seeds, extra sliced green onions, lime wedges (optional)
  • Base: Cooked rice, quinoa, noodles, or cauliflower rice

Préparation

    Pat the shrimp dry. Toss with a pinch of salt and pepper. Dry shrimp sear better and don’t steam.

    Make the sauce. In a small bowl, whisk soy sauce, oyster sauce, honey, rice vinegar, sesame oil, and broth. Stir in the cornstarch slurry.

    Prep the veggies. Slice everything before you start. Stir fry moves fast.

    Cook the shrimp. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add shrimp in a single layer and cook 1–2 minutes per side, until pink and just opaque. Remove to a plate.

    Stir fry the veggies. Add a little more oil if needed. Cook broccoli, carrots, and snap peas for 2–3 minutes. Add bell pepper and most of the green onions; cook 1–2 minutes more. You want crisp-tender, not soft.

    Add aromatics. Push veggies to the edges. Add garlic and ginger to the center with a splash of oil; cook 30 seconds until fragrant.

    Sauce it up. Return shrimp to the pan. Pour in the sauce and toss. Cook 1–2 minutes until the sauce thickens and coats everything.

    Taste and finish. Adjust salt, add a squeeze of lime, and sprinkle sesame seeds and remaining green onions.
