Chicken penne arrabbiata is the perfect pasta dish to try if you like fiery things! This is a twist on the traditional arrabbiata sauce that’s made just a bit heartier with the addition of tender chicken bits.

  • 1 tablespoon olive oil
  • 450 g (1 lb) chicken breast, cut into bite-size pieces
  • 1 medium onion, finely chopped
  • 2 large garlic cloves, finely chopped
  • 1 teaspoon red chilli flakes
  • 2 tablespoons tomato paste
  • 1 x 400 g (14 oz) can chopped tomatoes
  • 30 g (1 ounce) freshly grated Parmesan
  • 6-8 fresh basil leaves
  • Salt and pepper to taste
