- 2 medium bananas
- 100 ml low-fat double cream alternative
- 200 g fat-free Greek yoghurt
- 1 meringue nest ((approx. 180g, crumbled))
- 4 tsp toffee flavour dessert topping
Préparation
- 1
Peel the bananas. Add one to a bowl and mash well with a fork until you have a chunky puree. Slice the other banana and leave to one side.
- 2
Place the low-fat double cream alternative in a mixing bowl. Whisk with an electric hand whisk — on high speed — for about two minutes, until soft peaks are formed. Take care not to over-whisk the cream alternative otherwise it will become too stiff to fold in the remaining ingredients.
- 3
Add the yoghurt and banana puree to the bowl with the whipped cream alternative. Using a rubber spatula or large metal spoon, fold in gently until completely combined. Take care not to knock the air out of the mixture.
- 4
Add a little of the banana cream mixture to the bottom of 4 serving dishes. Top each with some of the banana slices, some meringue and ½ tsp toffee dessert topping. Repeat with the remaining banana cream, banana slices, and meringue. Drizzle the rest of the dessert topping over the top and serve.
