Riz frit à l’ail (sinangag)

Le sinangag, ou riz philippin à l’ail, est idéal pour utiliser du riz de la veille. Je vais vous montrer les ingrédients et les techniques qui permettent de rendre ce plat classique encore meilleur. Les grains de riz moelleux sont imprégnés d’huile à l’ail et relevés d’une généreuse quantité d’ail caramélisé.
Ingrédients
- 300 grams cooked long grain rice ((about 2 cups))
- 2 tablespoons olive oil
- 20 grams garlic ((3 large cloves, minced))
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper

Crumble rice.: Use your hands to break up any clumps in the 300 grams cooked long grain rice.

Fry garlic.: In a large frying pan, add the 2 tablespoons olive oil and 20 grams garlic and heat over medium-high heat, stirring regularly to ensure even browning. Fry the garlic until most of the sizzling subsides and the garlic is a golden brown color.

Remove some garlic.: Remove half of the garlic from the pan, leaving the oil behind.

Add rice.: Add the rice and toss to coat evenly with the oil and garlic.

Stir fry.: Stir-fry the rice until it's heated through. Season with 1/4 teaspoon salt and 1/4 teaspoon white pepper to taste.

Serve.: Serve the Sinangag hot and garnish with the reserved garlic. You can also top with some scallions for color.
