Soft, chewy, Gluten-Free Peanut Butter Chocolate Chip Cookies make the perfect pick-me-up cookie, or snack. These easy peanut butter cookies are loaded with healthy fats and protein and are quite scrumptious.

- 1/2 cup (about 8 oz) of gluten-free, dairy-free chocolate chips (or your favorite chocolate bar chopped)
