Spinach Salad with Goat Cheese & Beets

Ingrédients
- beets 1.00 lbs tops trimmed
- canola oil 2.00 tbsp
- water 3.00 tbsp
- honey 2.00 tsp
- Dijon Mustard 2.00 tsp
- baby spinach 10.00 oz
- goat cheese 1.50 oz crumbled
- pine nuts 0.25 cup

Scrub the beets and trim and discard the tops. Place in a saucepan or pot and cover with water. Bring to a boil
