Turmeric Rice with Chicken

This easy one-pot turmeric rice with chicken and peas gets ready in just 20 minutes. A full meal with rice, chicken, and veggies is an absolute kids' favorite too. With easy-to-find ingredients, this can be made any time of the week or weekend.
Ingrédients
- 1 lb Chicken (boneless)
- 1 cup Rice (basmati)
- 1 small Onion (chopped)
- 3 small Garlic cloves (minced)
- 2 tsp Curry powder
- 1 tsp Turmeric powder
- 1/2 cup Green peas (frozen)
- 1 tbsp Olive oil (cooking)
- 1/4 cup Herbs (fresh cilantro or parsley)
- 1 1/2 cups Chicken stock
- 1 tsp Salt
- 1/2 tsp Black pepper powder

Season the chicken pieces with salt, pepper, and curry powder. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken pieces until golden brown on all sides. Remove the chicken from the pan and set aside.

In the same pan, add the remaining olive oil. Sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute. Stir in the rice, peas, cilantro, turmeric powder, salt, and pepper. Cook for 2-3 minutes, stirring frequently.

Return the seared chicken pieces to the pan. Pour in the chicken broth and bring to a boil.

Reduce the heat to low, cover the pan with a lid, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed.

Fluff the rice with a fork and serve hot.
