  • 1/2 tsp Garlic powder
  • 1/2 tsp Cumin powder
  • 1 tsp Dried herbs (rosemary, thyme, oregano)
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh parsley (for garnish)
  • 2 tsp Lemon juice

    Prep - Wash the potatoes thoroughly and cut them into bite-sized pieces. You can leave the skin on for added texture and flavor or peel them.Pro tip - I used small size potatoes cut into 2 to 4 slices.

    Season - Add the potato pieces to the bowl and give it a generous drizzle with olive oil. Sprinkle in the spices and toss until they are evenly coated.

    Tray - Transfer the potatoes to a baking sheet lined with parchment paper, spreading them in a single layer.

    Roast - Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes, or until they are golden brown and crispy. Flip them once halfway through cooking to ensure even browning.
