Ingrédients

  • 2/3 cup Sun-dried tomatoes, sliced thinly
  • 3 tbsp Olive oil, divided
  • 8 cups Broccoli florets
  • 1/2 cup Yellow onion, chopped
  • 2 cloves Garlic, minced
  • 1 1/4 cups Chicken stock
  • 1 tsp Italian seasoning
  • 1/2 tsp Paprika
  • 1/2 tsp Red pepper flakes
  • Kosher salt and pepper to taste
  • 1/4 cup Heavy cream
  • 1/4 cup Chopped fresh basil
  • 1/2 cup Grated Parmesan cheese + more for garnish

Préparation

  1. 1

In a large skillet with a fitted lid, heat 1 tbsp olive oil to medium-high heat. Add 4 cups of the broccoli florets to the skillet into an even layer. Brown on both sides for about 2 minutes each and then stir to cook making sure all the florets are golden brown. Remove florets from the skillet and place in a large bowl.

  2. 2

In the same skillet, add 1 tbsp of olive oil and repeat the process with the remaining 4 cups of broccoli florets. Remove from the skillet and set aside in the broccoli reserved bowl.

  3. 3

Next, add 1 tbsp of olive oil to the skillet followed by the yellow onion. Cook the onion until softened, about 2 to 3 minutes. Add in the sun dried tomatoes and garlic. Cook for another few minutes.

  4. 4

Add in the reserved broccoli to the skillet followed by chicken stock, Italian seasoning, paprika, crushed red pepper, kosher salt, and pepper. Cover the skillet and cook for about 3 to 4 minutes. This will help make the broccoli nice and tender. Remove the lid and stir in the cream and basil.

  5. 5

Remove the skillet from the heat and stir in the Parmesan cheese. Serve and enjoy!
