J’adore le contraste entre la purée de courge musquée relevée d’une touche de sirop d’érable, et le porc acidulé, parfumé aux herbes, parfaitement assaisonné et moelleux (ça fait trop d’adjectifs, vous trouvez ?)

Ingrédients

  • 3-pound pork loin roast
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon sea salt
  • 3 Tablespoons avocado oil or other heat-safe oil, divided
  • 1 teaspoon dried, crushed rosemary
  • 1 teaspoon dried rubbed sage (or 1/4 teaspoon ground sage)
  • 1/2 teaspoon black pepper
  • 2 pounds of butternut squash cubes
  • 2 shallots, peeled and sliced thinly
  • 1/4 cup pure maple syrup
  • 1/2 cup chicken stock

Combine the mustard, sea salt, 1 Tablespoon avocado oil, rosemary, sage, and black pepper in a small bowl. Stir to create a paste, then rub the paste over the entire pork roast. Cover the roast with plastic wrap and chill in the fridge for at least 2 hours, up to 12 hours.
