Ingrédients

  • 1/2 cup tapioca starch
  • 1/2 cup potato starch
  • 1 teaspoon xanthan gum

  • 16 tablespoons (two sticks) frozen unsalted butter, grated
  • 1/2 cup cold water
  • 1 egg, for an egg wash (or heavy cream)
