  • 1 tbsp Thai yellow curry paste
  • 1 tbsp lime juice
  • 1 tsp fish sauce (or soy sauce for vegetarian)
  • 1 tsp coconut sugar
  • brown sugar; honey; agave
  • 1/2 tsp grated ginger (optional for brightness)
  • thinly sliced red chili, cilantro, and a few toasted coconut flakes
  • 4 medium boiled eggs
  • 1/2 cup Greek yogurt (plain, full-fat or 2%)
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1–2 tbsp water (start with 1 tbsp and adjust for pourable texture)
  • 2 tsp za’atar spice blend

  • pinch sumac (optional for brightness)

  • Water (enough to cover eggs by about 2 inches)
  • Ice for cooling

    Bring a pot of water to a gentle boil. Gently lower in the eggs using a spoon, then start your timer immediately.

    Boil for 6 minutes for that perfect soft, jammy yolk (slightly runny center, fully set whites).

    Immediately transfer eggs straight into an ice bath for 10 minutes to stop cooking. Again, no less than 10 minutes.

    Gently tap and peel under running water. Pat dry, then add to your marinade!
