  • 1 large red onion (minced)
  • 1 bell pepper (diced )
  • 4 clove garlic (crushed)
  • 1 1/4 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper ((freshly-cracked, or ground), or to taste)
  • 1 cup tomato sauce
  • 1 tablespoon minced parsley

    Roasting: Put the eggplants directly on the fire on your stove.
