  • 2 12-ounce New York strip or rib-eye steaks, about 1 1/2 inches thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper (freshly ground)
  • 2 tablespoons oil (such as canola or grapeseed)
  • 1 tablespoon unsalted butter
  • Fresh thyme leaves (optional)

    Dry steaks: Begin by patting the steaks dry with paper towels to ensure proper searing.

    Season the steaks evenly with kosher salt and black pepper.

    Heat skillet: Heat a heavy skillet, preferably cast iron, over medium-high heat until very hot.

    Add oil: Add the oil to the hot skillet and wait until it shimmers.
