Rôti de longe de porc savoureux

Savourez une longe de porc rôtie à l’ail et au romarin, tendre et juteuse. Marinée toute la nuit pour développer ses saveurs, puis saisie et rôtie à la perfection. Sans gluten.
Ingrédients
- 1/4 cup and 2 tbsp extra-virgin olive oil
- 8 garlic cloves (chopped)
- 1 bunch rosemary (chopped)
- 2 tsp kosher salt
- 1/2 tsp pepper
- 2 lb center-cut pork loin

Combine marinade: In a small bowl combine 1/4 cup olive oil, chopped garlic, rosemary, salt, and pepper.

Rub pork: Rub all over the pork, including the top, bottom, and sides.

Marinate: Put the pork in a plastic bag. Marinate overnight in the fridge.

Temper pork: Take the pork out of the fridge and let stand at room temperature for 30 minutes. Brush off as much marinade as you can.

Sear pork: Heat a large oven proof skillet over medium-high heat. Add the remaining 2 tablespoons of oil and heat until it begins to shimmer. Add the pork and cook until brown on all sides. This takes about 10 minutes total.

Roast: Transfer to preheated 400° F oven and roast for 40 to 45 minutes, or until a thermometer registers 135° F.

Rest and slice: Transfer to a board and let rest for 15 minutes before serving. Slice into thin pieces.
