Ingrédients

  • 3 lbs sweet potatoes (peeled)
  • 6 tbsp butter
  • 3/4 cup milk (plus more if needed)
  • Salt and pepper (to taste)

Préparation

  1. 1

Cut the sweet potatoes into equal size chunks (I usually do somewhere between 1/2 -1 inch wide pieces). Add to a large pot filled with water.

  2. 2

Bring the potatoes to a gentle boil over medium high to high heat. Once boiling, cook for 10-20 minutes or until they are very tender (the time depends on the size of your pieces). Once they look done, check for tenderness. The best way to know if they are done is to pull one out and smash with a fork. Then taste it and see if it has any lumps. If so, continue to boil until evenly tender.

  3. 3

Pour the potatoes into a colander. Shake vigorously, removing as much water as possible. Add them back to the hot pot and top with butter, salt, and pepper. Then allow the potatoes to sit uncovered for 5 minutes in order to release excess moisture.

  4. 4

Using a hand mixer, mix on low to med speed until the potatoes are mostly mashed and only small chunks remain. Then pour in the milk. Whip on med to high speed, adding more milk until the desired consistency is reached. Serve and enjoy!
