Échine de porc marinée au 7-Up
Échine de porc tendre marinée dans du 7-Up, de la sauce soja, du gingembre et de la sauce d’huître, poêlée jusqu’à ce qu’elle soit caramélisée et juteuse.
Ingrédients
- 1 kg pork scotch, sliced into thick pieces
- 1 cup 7-Up or any clear lemon-lime soda
- 2 stalks scallions, chopped
- 1 thumb ginger, grated
- 1 tbsp cooking wine
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp garlic & spiced salt powder
- 2 tsp cornstarch or potato starch
- oil for frying

In a bowl, combine 7-Up, scallions, ginger, cooking wine, soy sauce, oyster sauce, and garlic & spiced salt powder.

Add pork slices and mix thoroughly. Cover and marinate for at least 2 hours or overnight for best results.

Sprinkle starch over the marinated pork and toss lightly until coated.

Heat a pan over medium-high heat with a thin layer of oil.

Fry pork pieces without overcrowding the pan. Cook until deeply caramelised and crisp around the edges.

If desired, pour leftover marinade into the pan and simmer until reduced into a sticky glaze.

Rest briefly before serving with steamed rice or noodles.
