Peach Galette

Rustic, flaky, and juicy with warm cinnamon, sweet peaches, and a buttery crust. This peach galette is laid-back summer dessert perfection in every golden slice.

- ⅛ teaspoon nutmeg
- 2 teaspoons fresh lemon juice
- 1 pinch salt
- ½ teaspoon vanilla bean paste
- 3 tablespoons all-purpose flour
- 2 tablespoons rolled oats (to help absorb fruit juices)
- 1 tablespoon butter (cut into small pieces)
- 1 egg
- 1 tablespoon water
- turbinado sugar (or raw sugar optional, for sprinkling crust)
