Tostadas francesas con canela y plátano caramelizado

Tostadas francesas crujientes por fuera y tiernas por dentro, con el cálido aroma de la canela y plátano caramelizado dulce. Este es el desayuno que no querrás saltarte.
Ingredientes
- 4 slices white or semi-white bread (preferably one day old)
- 2 eggs
- 100 ml whole milk
- 1 tsp cinnamon, plus extra for sprinkling
- a pinch of salt
- 2 ripe bananas
- 2 tbsp brown sugar
- 40 g unsalted butter (divided)

Whisk the eggs in a shallow bowl with the milk, one teaspoon of cinnamon and a pinch of salt. Stir until smooth.Peel the bananas and cut them into slices about half a centimetre thick.Melt a knob of butter in a frying pan over medium heat. Place the banana slices in the pan and sprinkle with the brown sugar. Let them caramelize to a golden brown for two to three minutes, flip them over and cook for another minute. Remove from the pan and set aside.Dip the slices of bread one by one into the egg mixture. Let them soak briefly, but not so long that they fall apart. Fifteen to twenty seconds per side is enough.Heat another knob of butter in the pan over medium heat. Cook the French toast for two to three minutes per side until golden brown and crispy.Place the French toast on a plate, spoon the caramelized banana on top and sprinkle with an extra pinch of cinnamon. Serve immediately.
