The tastiest failed omelet with spinach & sun-dried tomatoes

This dish is officially called a failed omelet, but the result is delicious: airy scrambled eggs with wilted spinach, creamy ricotta and sweet sun-dried tomatoes. Ready in a few minutes and perfect for a quick lunch or a light dinner.
Ingredientes
- About 8 tbsp egg whites (or 4 generous squeezes from the bottle)
- 2 handfuls of spinach
- 1 tbsp ricotta
- 1 tbsp sun-dried tomatoes, finely chopped
- salt & pepper from the mill
Preparación

1. Mix the egg whites with salt & pepper to taste. 2. Heat some oil in the pan, add the spinach and let it wilt slightly. 3. Pour the egg whites over it and stir gently until small curds form. Don’t cook it for too long: you want the egg to stay nice and creamy, not dry. 4. Spoon the scrambled eggs onto a plate, add a spoonful of ricotta on top and finish with some sun-dried tomatoes. Enjoy!
