Oatmeal Cups
Oatmeal is a fantastic filling breakfast but some days time is of the essence. That's what makes these oatmeal cups a great breakfast on the go. Make a batch, freeze half and never leave the house hungry!

In a separate bowl, combine the eggs, honey, bananas, and vanilla. Slowly whisk in the almond milk and coconut oilAmount1/4 cupIngredientmelted coconut oil.

Add the wet ingredients into the dry and stir together, then fold in chocolate chips and walnutsAmount1/2 cupIngredientchopped walnuts. Pour mixture into 12 greased muffin pans, and bake for 30 minutes. Let sit for 10 minutes before removing them from the pans and finish cooling on a wire rack.
