  • 1 cup shredded low-moisture mozzarella
  • 3/4 cup crumbled feta
  • 1 teaspoon dried oregano (or Italian seasoning)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Lemon wedges, for serving
  • Optional dips: tzatziki, hummus, or a quick yogurt-garlic sauce

    Prep the filling: Warm 1 tablespoon olive oil in a skillet over medium heat. Add red onion and sauté 2–3 minutes until softened. Stir in garlic for 30 seconds.

    Assemble: Place a tortilla on a board. Sprinkle 1/4 cup mozzarella on one half, add a generous scoop of the spinach mixture, then 3–4 tablespoons feta. Top with another light sprinkle of mozzarella (it glues the tortilla). Fold the tortilla closed. Repeat with the rest.

    Cook: Heat a thin film of olive oil in a nonstick skillet over medium to medium-low. Cook each folded quesadilla 2–3 minutes per side, pressing gently, until golden and the cheese melts.
