Ingredientes

  • 3–3.5 pounds pork baby back ribs, thawed if frozen
  • 1 tablespoon dried chives (for low FODMAP) or 1 teaspoon onion powder
  • 1 tablespoon sea salt
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon sweetener of choice (see notes, optional)
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 full batch of Sugar-Free BBQ Sauce (Keto and Low Carb) or
  • 1/2 batch of Low FODMAP BBQ Sauce (Paleo, Refined Sugar-Free) or
  • your BBQ Sauce of choice
  • 1 cup cold water
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon liquid smoke (optional)

Preparación

    Remove the Membrane (if needed): Line a baking sheet with parchment paper. Cut the rack of ribs in half and place on the baking sheet meat side down. If the white membrane on the bone side is still intact, use a paper towel to grip an edge and gently peel it away. Discard the membrane once removed.

    Apply the Dry Rub: In a small bowl, combine the dry rub ingredients. Sprinkle the rub evenly over both sides of the ribs, pressing it into the meat. Let the ribs rest at room temperature on the parchment for 30 minutes to allow the spices to absorb.

    Prepare the Instant Pot: Add the trivet to the Instant Pot along with the water, apple cider vinegar, and optional liquid smoke. Place the ribs upright on the trivet, bending slightly if needed to fit.

    Pressure Cook: Secure the lid and set the pressure release valve to “Sealing.” Hit “Pressure Cook” (or “Manual”) and set the timer for 25 minutes on high pressure. Once the cooking cycle has completed, let the pressure release naturally for 10 minutes, then manually release any remaining pressure. Open the lid and check that the internal temperature of the ribs has reached at least 145°F (63°C) for safe consumption with an instant read thermometer (it should be well above that).

    Make the BBQ Sauce (if needed): While the ribs cook, prepare either a full batch of Sugar-Free BBQ Sauce or a half batch of Low FODMAP BBQ Sauce, depending on your dietary needs. Set aside.

    Sauce and Broil: Preheat your oven to Broil. Line a fresh baking sheet with tin foil. Carefully transfer the ribs from the Instant Pot to the baking sheet, meat-side down first (they may fall apart, so handle with care.) Generously brush BBQ sauce over the bone side, then flip and coat the meat side. Slather those ribs! Place the baking sheet under the broiler for 2–4 minutes, or until the sauce is warm.

    Serve: Remove ribs from the oven and brush with additional BBQ sauce. Serve with your favorite sides like Pork and Beans, Homemade Coleslaw, Skillet Cornbread, or any classic BBQ side dish.
