Ingredientes

  • 1 cup plain Greek yogurt (10% MF works best)
  • 1 cup small curd cottage cheese (4% MF works best)
  • 1 tablespoon dried chives or 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon xanthan gum (optional, but recommended)
  • 1 1/2 cups marble or cheddar cheese, shredded, divided
  • Sea salt, to taste (optional)
  • 2 cups plain cooked chicken, shredded
  • 1/2 cup hot sauce (like Frank’s RedHot Original or Louisiana Hot Sauce, see note)
  • 2 cups Pulled Buffalo Chicken (omit hot sauce listed above)
  • Avocado oil cooking spray (or your preferred spray)
  • Chopped scallions, parsley, or chives and an extra drizzle of hot sauce

Preparación

  1. 1

Preheat oven to 350°F (175°C) and place rack in the center position. Lightly spray a 1.5 quart baking dish with cooking spray.

  2. 2

Blend Dairy Base: Add Greek yogurt and cottage cheese (in that order) to a blender or food processor. Blend on low speed until just combined, about 30 seconds, gently shaking the blender if needed to move things along. Pour into a large mixing bowl.

  3. 3

Season: Whisk in the chives or onion powder, garlic powder, smoked paprika, dried dill, black pepper, and xanthan gum (if using). Stir until combined.

  4. 4

Add Cheese and Chicken: Fold in 1 cup of the shredded cheese and the shredded chicken. If using plain cooked chicken, stir in the hot sauce. If using Pulled Buffalo Chicken, skip the extra hot sauce like the responsible adult you are. Taste and add sea salt if needed (yes, it's totally fine to taste it before baking).

  5. 5

Transfer to Baking Dish: Spread the mixture evenly into the prepared dish.

  6. 6

Bake for 30–35 minutes, or until the center looks set and the edges are hot and bubbly. If your oven runs cold, don't be shy—give it the full time.

  7. 7

Add Cheese Topping: Remove the dip briefly from the oven, move the oven rack up one position, and switch to Broil. Sprinkle the remaining ½ cup cheese on top. Broil 1–3 minutes, watching closely because it goes from "golden perfection" to "whoops" in seconds.

  8. 8

Cool: Remove from the oven and let it cool for 25 minutes before digging in. (Yes, 25. Trust me, it's worth the wait.)

  9. 9

Serve: Top with chopped scallions, parsley, chives, and extra hot sauce or shredded cheese if desired. Serve warm with your favorite dippers (see notes for options).
