- 28 oz can red enchilada sauce, divided
- 1 cup shredded whole milk mozzarella
- 12-15 fajita-size flour tortillas
- 8 oz freshly shredded colby jack cheese
- 3 – 4 cups cooked rice (made in a rice cooker for convenience)
- 10 oz can Rotel mild diced tomatoes and green chilis, mostly drained
- Salt & cracked black pepper, to taste

In a large mixing bowl, combine ground beef, chopped onion, chopped garlic, Sazon, tomato bouillon, adobo seasoning, and diced green chilis.
