  • 1 1/2 cups mozzarella cheese, coarsely shredded (lactose-free if needed)
  • 1/2 cup fresh parmesan cheese, finely shredded
  • Avocado oil cooking spray (or your preferred cooking spray)
  • Additional shredded cheese, chopped scallion greens, fresh chopped parsley
