Coliflor Buffalo – Estilo Erewhon

Antojo de una alternativa deliciosa y más saludable a las alitas picantes estilo buffalo. Prueba esta receta imitación de Erewhon de coliflor buffalo que equilibra perfectamente sabores picantes y avinagrados con un toque crujiente muy satisfactorio. Este plato fácil de preparar es perfecto para días de partido, aperitivos o simplemente un sabroso tentempié que encantará a todos. ¡Y se prepara por completo en el horno!
Ingredientes
- 1 whole head cauliflower (florets cut off)
- 1 1/4 cup buttermilk
- 1/3 cup cornstarch
- 2/3 cup all-purpose flour
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup panko breadcrumbs
- avocado oil spray
- 1/2 cup buffalo sauce (more as needed)
- chopped chives (optional garnish)
Preparación

Preheat oven to 425°F.

To a large mixing bowl, add the buttermilk, cornstarch, flour, chili powder, garlic powder, paprika, salt, and black pepper. Whisk together until you have a thick batter consistency.

Add the cauliflower florets and mix until all are coated evenly.

Then add the panko breadcrumbs and mix again.

Line a baking sheet with parchment paper and add the battered cauliflower so that they're not touching.

Pop in the oven to bake for 20 minutes.

Remove from the oven. Flip over each floret, spray with oil, and then bake for an additional 10 to 15 minutes until golden and crispy all around.

Once golden and crispy, take it out of the oven. Add to a bowl and add as little or as much buffalo sauce as you'd like and toss it.

Transfer back to the tray and bake for an additional 10 to 15 minutes.

Remove from the oven, top it off with chopped chives, and enjoy with some ranch or blue cheese dressing.
