- 10 ounces Chopped Frozen Spinach (– thawed, drained & squeezed dry (can substitute 1 1/2 cups Fresh Spinach))
- 12-16 ounces Cooked Bacon (– chopped (about 1 1/2 cups) (SEE NOTES))
- 1 1/4 Cup Shredded White Cheddar (- DIVIDED (4 ounces) )
- 1 Cup Shredded Gruyere (- DIVIDED (3 ounces))
- 5 large Eggs
- 3/4 Cup Half-and-Half ((substitutes: Heavy Cream or Full-Fat Whole Milk))
- 1 heaping tsp Dijon Mustard
- To Taste Kosher Salt & Ground Black Pepper

Preheat oven and Prepare Pie Pan: Preheat oven and Prepare Pan: Arrange oven rack to the middle position and then preheat the oven to 350 degrees Fahrenheit. Lightly grease a 9-inch pie pan (9x2-inch or equivalent) with non-stick cooking spray.
