Receta de arroz a la mexicana

Este sencillo arroz a la mexicana queda esponjoso, lleno de sabor y es el acompañamiento perfecto para tacos, enchiladas, burritos y mucho más.
Ingredientes
- 1 medium white onion or sweet onion (finely diced)
- 2 Tbsp olive oil
- 2 cups white long grain rice (i.e. Ben's Original)
- 1 32 oz low sodium chicken broth ((Or 4 cups water))
- 1 cup taco sauce ((mild/medium/hot your preference))
- 1 4 oz can diced green chiles, drained ((mild/medium/hot your preference))
- 2 Tbsp taco seasoning
- 2 tsp granulated garlic or garlic powder
- 1 1/2 tsp seasoned salt
- 1-2 tsp dark chili powder
- fresh cilantro

In a large saucepan sauté the onion and olive oil over medium-high heat for 2-3 minutes.

Add the rice, stirring to coat with the oil. Toast the rice stirring constantly until fragrant and lightly golden brown, around 1-2 minutes.

To the pot add the taco seasoning, granulated garlic, seasoned salt and dark chili powder. Stir well. chicken stock,

Add chicken broth, taco sauce and diced green chiles. Mix well.

Cover and bring to a boil over medium-high heat then immediately lower to a simmer. Cook on low heat for 20-25 minutes or until the liquid has been absorbed. Remove from the heat and let stand for 5 minutes.

Fluff with a fork then serve garnished with fresh cilantro.
