Arroz integral con limón y cilantro

Este sabroso plato con un toque cítrico es ideal para acompañar curris. He utilizado arroz basmati integral, y la adición de cúrcuma le da un color muy apetitoso.
Ingredientes
- 1 tablespoon coconut oil (or 1/4 cup water for oil-free option)
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1/2 teaspoon fresh ginger (minced)
- 1/4 teaspoon turmeric powder
- 1 cup 185g long-grain brown rice, rinsed
- 2 1/2 cups 600g water
- 1 tablespoon lemon juice
- 1 teaspoon sea salt (or to taste)
- 1 teaspoon sesame oil (optional)
- Pinch of cayenne pepper (optional)
- 1/4 cup 4g chopped cilantro, plus extra for garnish

Heat coconut oil (or water) in a medium saucepan over medium heat.

Add the chopped onion and sauté until soft and translucent, about 3–4 minutes.

Stir in the minced garlic and ginger, cooking for another 1–2 minutes until fragrant.

Mix in the turmeric and cook for 30 seconds to release its aroma.

Add the rinsed brown rice and stir well to coat it with the spice mixture.
