Albóndigas griegas (Keftedes)

Hechas con una mezcla de carne picada de ternera, cerdo o cordero, estas albóndigas griegas, o keftedes, son un aperitivo sencillo y fácil de preparar, ideal para compartir. Sazonadas con hierbas frescas y llenas de sabor.
Ingredientes
- 1 lb lean ground beef (93% lean)
- 1/2 lb ground pork or lamb
- 1 egg
- 1 cup breadcrumbs
- 1 medium red onion (grated)
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (finely chopped)
- 6 large mint leaves (finely chopped)
- 1/2 teaspoon dried oregano
- Zest of 1 lemon
- 1 Tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Mix all ingredients in a bowl until well incorporated, but be careful not to overmix it.

Using a 1-inch scoop, take from the mixture and make meatballs using your hands to form the balls. (You can dip your hands in a bowl with water when they get too sticky to help make your meatballs smoother.)

Place on a parchment lined baking sheet and bake in a preheated 350 F oven for about 20 - 25 minutes, or until cooked through.

Take out from the oven and let meatballs rest for 5 minutes.
