Albóndigas de cerdo asiáticas

Rápidas y fáciles, la cena perfecta entre semana.
Ingredientes
- 600 g pork mince
- 2 tsp grated ginger
- 1 tbsp sesame oil
- 1 spring onion (chopped)
- 5 tbsp Asian chili garlic sauce
- 5 tbsp sesame oil
- 2 tbsp garlic (crushed)
- 2 tbsp grated ginger
- 4 tbsp honey
- 100 ml rice vinegar
- 100 ml mirin
- 250 g beansprouts
- 1 red chili (sliced at angle)
- 1 handful mint
- 1 handful coriander
- 2 tbsp peanuts (chopped)
- 1 spring onion (sliced at angle)
- 4 tbsp crispy shallots
- 100 g snow peas
- 1 tbsp sesame seeds
- 1 cup rice
- 1 lime (cut into wedges)

--- Salad ---

cut & toss: Cut the red chilli and snow peas into thin slices, toss all the salad ingredients together and set aside until needed

--- Meatballs ---

Chop the spring onions finely and mix all the ingredients together
- 5
make meatballs: Form the pork mince into 16 equal sized meatballs
- 6
cook rice: Start to cook rice according to packet – I use a rice maker in the microwave which takes 13 minutes

pan fry meatballs: Pan fry the meatballs on medium-high heat with oil for 2-3 minutes until browned, remove and place on a baking tray in the oven and cook at 180c for 8 minutes

add sesame oil: In the pan you fried the meatballs add the sesame oil

cook spices: Cook garlic, ginger, Asian garlic chilli sauce and honey for 1 minute

add mirin/vinegar: Add mirin & rice vinegar and cook for a further minute – set aside until meatballs are cooked

thicken sauce: Add cooked meatballs back into sauce and cook for 1 minute until sauce thickens slightly, coats meatballs in the sauce and serve
