Cerdo Agridulce

Ingredientes
- 1 pound pork loin (cut into bite-sized pieces)
- 1/2 cup cornstarch
- salt and pepper (to taste)
- 3 tablespoons vegetable oil
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder
- 1 medium bell pepper (cut into 1 inch pieces)
- 1 medium onion (cut into 1 inch pieces)
- 8 ounces pineapple chunks (1 can, drained, juice reserved)

Season the pork:: Season the pork pieces with salt and pepper, then toss with cornstarch until well-coated.

Prepare the sauce:: In a bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, garlic powder, and 2 tablespoons of the reserved pineapple juice. Set aside.

Fry the pork:: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the pork and fry until golden and crispy, about 5-7 minutes. Remove the pork from the skillet and set aside.
